Chewy Apricot Oat Bars

Adapted from Yammie’s Noshery

Equipment

8×8 baking dish

1 medium bowl

1 medium sauce pan

1/2 cup measuring cup

1/2 tsp measuring spoon

Spoon/spatula

Oven heated to 375*F

Bar Ingredients

1.5 cups of all-purpose flour

1 cup oats

1 cup brown sugar

1/2 tsp cinnamon

1 teaspoon baking powder

1 teaspoon vanilla

1/2 teaspoon salt

1.5 sticks unsalted butter (melted)

3 tbsp coconut flakes

Filling Ingredients

1/2 cup water

1/8 cup orange juice

zest of 1/2 orange

1 cup turkish apricots

1/4 cup sugar

Instructions:
In a medium saucepan combine apricots, orange juice, orange zest and water. Bring to a simmer, cover and cook for 20-30 minutes until the apricots are falling apart. Mash with a masher or process in a food processor until smooth. Let cool.

Preheat the oven, line a 8×8 baking dish with parchment paper and spray with cooking oil. Combine all of the bar ingredients (oats, flour, sugar, etc) mixing thoroughly. Pour the butter over and mix until all the dry ingredients absorb the butter. Reserve 1 cup of the mixture and pat the rest down into the making dish making sure the layer is compact and even. Spread the filling evenly and crumble the reserved mixture on top. Sprinkle the top with the coconut flakes and bake uncovered for 35 minutes. Let stand to cool and enjoy.
