Spring/Summer Quinoa with Herbs


1 cup of Quinoa

2 cups of chicken broth (low sodium)

1/2 cup of parsley

2  scallions

1/2 cup cilantro

2 tablespoons of olive oil

salt and pepper to taste

Preparation Instructions:

Bring broth to a boil in a pot, add quinoa, cover and cook for 15 minutes. Meanwhile chop parsley, cilantro and scallion. Once quinoa is cooked, fluff with a fork and let it cool.

Add all the herbs to the cooled quinoa along with olive oil. Salt and pepper to taste.
